I'm a big fan of lamb (and mutton).<br /><br />My husband used to work for the oil company that dare not speak its name. We had an American colleague come over to our house in Glasgow for dinner so I made a casserole (arrival time was uncertain). After our guest had eaten three helpings he told me that that was the best beef dish he'd ever had. He was completely speechless when i told him it was lamb. When my mother was young, living in NYC, they ate lamb every Sunday. My husband is from Oregon and they eat lots of lamb out there. It is the Pearly Veal and Onion Stew in a cookbook called "The Silver Palate" by Julie Rosso & Sheila Lukins. <br /><br />I never liked the idea of veal (the way the calves are treated; I just couldn't support that by buying veal). So, I substituted lamb stew meat instead and it was FABULOUS. The recipe serves 8 to 10, but it is really easy to halve the recipe. It calls for rosemary, oregano, garlic, white wine and pearl onions. The other thing I love about it, after browning the meat and putting in all the spices, you stick it in the oven. You don't have to constantly "tend" it. <br /><br />With any luck, you may already have this cookbook on your shelf.Kathy in VAnoreply@blogger.com
