I'm dying to paint this but I don't have any time. Maybe in the winter..... I always stay away from painting sunflowers because my paintings would never be as good as Van Gogh's.

Paint the sunflowers. They would be every bit as good as Van Gogh's; they just would not BE Van Gogh's. Give the painting away if you cannot bear to look at it because it doesn't live up in your eyes. Create your art.
I agree with sonja--paint the sunflowers. I took on some iris and had the same hesitation because of his famous painting. Of course mine are probably only beautiful in my eyes, but it was very satisfying and I enjoyed it immensely. You can see them here: http://blogotional.blogspot.com/2005/05/illuminated-scripture_12.html, not Van Gogh's but then nobody can be.
Nonsense, paint your flowers, not Van Gogh's. You are Kristin. And a Woman. Van Gogh was Van Gogh and a dutchman.. First thing I was taught from my first art classes. Never compare yourself to anyone , but yourself. Mr. Boyd was a very wise man.
